I don't think Thai is well catered for in Hawker Centres, there is a great Thai restaurant in Little India though (Phad Thai) we have frequented that as a group from the forum a couple of times and the host is one of our own.
In regards to Indian, again, not normally something I tend to go for in hawker centres, but, I am sure some will be able to advise, there are lots of nice places to eat Indian food in Singapore however.
Chinese and Indonesian food is much more readily available, again, each hawker has "famous" stalls for particular dishes, i.e. Blk 85 in Bedok has good Pork Porridge, BBQ Stingray and Satay, Whompoa does excellent Carrot Cake and Wings, Bedok food corner does great Ayim Penyat and local desserts. Best thing to do is go to the one that's kinda easiest for you to get to and work ou what is best there and build up your own knowledge. good tip, Look for long queues, they tend to be the most popular stalls, sometimes this is a good sign!
