Depends what type of traveller you are. HK has some quaint islands to the south (cheung chau). It also has great hikes in Sai Kung. But if you're short on time, you should just hit up the more conventional tourist sites like the peak, TST and LKF.

I just came back from a conference there. I didn't have much time to sight see, so I went to Big Buddha and hopped on a bus tour out to Tai O fishing village (which was moderately interesting...) while I was there on Lantau. The cable car out there was probably the best part. The highlight of HK for me was the architecture and vibe of city life in the Central-Wan Chai-Mid Levels-Causeway Bay area. Mostly our time was spent walking leisurely (as leisurely as you can in that very hilly area!) between restaurants that were recommended to us and our hotel (YWCA on Macdonnell rd in the mid levels). it's a nice place for good dim sum. be sure to try their dim sum there :) go to the peak and watch the symphony of lights at tsim sha shui.
I once complained that I had no shoes, until I saw a man with no feet.
