I carve it first and then present it on a platter. I'm pretty good at dismantling a bird, if I do say so myself
I've thought about cooking the turkey upside down, but I've never had a problem with it being dry my way, and I finally actually got it evenly brown this time in my tiny oven. I just left a small square of foil on top throughout the cooking, wheras I used to keep foil on the whole thing until the last hour and then remove it all. Anyway, it was a tasty bird, well enjoyed by we three plus 6 friends
