I carve it first and then present it on a platter. I'm pretty good at dismantling a bird, if I do say so myself :-)
I've thought about cooking the turkey upside down, but I've never had a problem with it being dry my way, and I finally actually got it evenly brown this time in my tiny oven. I just left a small square of foil on top throughout the cooking, wheras I used to keep foil on the whole thing until the last hour and then remove it all. Anyway, it was a tasty bird, well enjoyed by we three plus 6 friends :-)

Sounds like a successful evening.

I spent the evening making up my marinade and injecting the bird with it (about 1.5 cups all total) and wrapped up the bird in a plastic bag and put her in the fridge till tomorrow. I do the bird, & the ham (small rolled just for the variety) the wife does the rest. Will miss my daughter this year as she's still on the rig off the coast of Africa with two weeks more to go. :-(

Ham! I've been looking everywhere (ok not everywhere...) for a ham to roast. Really I want to make soup with the bone, but everywhere I've looked just has lunch meat ham :-\ Do I have to go to Dempsey or one of the boutique butchers or is there a cheaper option?

Happy Thanksgiving everyone! It rained, but seemed the family still didn't let that dampen their spirits.

Yep, rather interesting. As soon as I got the Deep Frying rig all set up and the timing of everything lined up the bottom proceeded to fall out of the clouds. You cannot deepfry indoors and you can't deepfry outdoors with 18 litres of 350 degree oil and have water landing in the oil! :o

So, we did it on the stairwell landing outside of the flat. Worked pretty good except it got dark too early due to overhanging clouds in the storm and the stupid stairwell lighting isn't on photocell switches but on a fixed time so here I am try to deepfry a turkey with a flashlight! Once we got the bird in it was okay and all worked out well, but some anxious moments. :cool:

Happy thanksgiving all, I'll be having a home made pizza or Thai food at a restaurant depending on if I stay in or go out!
