Sucrose (table sugar, cane sugar etc) is hydrolised in the stomach giving glucose and fructose. Fructose starts to be metabolized in the liver while glucose not (passes through the liver). Glucose to be metabolized (the desired way) needs insulin. Fructose level is not controlled by insulin.beppi wrote:Fructose is just another form of sugar and has the same health effects. It may be debatable whether eating (more) sucrose in a given age is good or bad but saying it has the same health effects as fructose is not correct. Besides, and actually the main point of using fructose as the replacement for sucrose is that you need it less for the desired sweetness level. We are overexposed to sucrose so the common sense suggests to avoid it (especially if there are cases of diabetes in someones family).
