well, the philippines was a spanish colony, partly administered from mexico then...

there are tamales in the philippines but they're made from some sort of savory chicken dish, with a glutinous rice (or congealed coconut milk) cake, sometimes with salted egg wrapped in banana leaves.

Funny enough in the South of Mexico we wrap tamales in banana leaves as well. It might be interesting to try the Filipino version.

I had a pretty good tamales recently at the American Club. Will need to be a member or friend of a member to get in though.

it's much smoother (because the rice is ground) than a corn-based one and the savory filling can be slightly salty but on the sweet side.
