I presume the only ones of interest are the Noble Prize winners, because they have documented research. You shouldn't believe what you read in books, without the proof to back it up.
People write books to make money, and will make claims, that are not true. all the facts are out there.
All though I have a strong opinion on the issues of PH Values, and acid, it is a logical conclusion, that our bodies, are changing between acidity and akaline, and it becomes weakend, if it goes to far either way.
Acids are vital to fight the free radicals, and to detoxify the body, Red Wine is full of important acids, with a specific job to do.
Vinegar is wine, that has gone bad, and is in fact a product of acetic acid, it is totally wrong to believe that vinegar is acetic acid.
You can read the facts by Noble Prize winner Adolf Krebs in 1953 on the citric acid cycle and metabolism, and Dr. Konrad Lynen Noble Prize Winner in 1964.
Acids are vital to your health and should be consumed by natural brewed vinegar, like yoghurt and cheese vinegar is alive, with healthy microbes, that protect you from free radical, by detoxing the body, vinegars have amazing health benefits, and can cure many ailments, detoxing at the same time.
