There are quite a few which specialize in vegatarian/vegan food

Original Sin in Chip Bee Gardens is a little different as it caters for mediterranean style veggie food.

Many Hawker Centres/Foodhalls also have purely veggie stalls which aren't too bad

I like Original Sin..
Lingzhi Vegetarian Restaurant is not bad but it can be abit pricey. Try Whatever Cafe for their vegetarian/vegan options. It's at 20 Keong Saik Street in Chinatown.
Namaste..
