My husband works for a hotel here and to the best of my knowledge French chefs are in short supply. So there is definitely a demand. However, from what I understand, the terms are not particularly good. Meaning very few places will offer the 44 week holiday which the French are accustomed to.
I also don't think the remuneration is particularly good compared to other places in Asia eg Hong Kong or Taipei.
But if you are interested it's worth a try.
If you are not French, but specialize in French cuisine, you may be at a slight disadvantage because as you perhaps know, most restaurants or hotel restaurants market themselves based on their "French" chefs.
But I guess it all boils down to what you can negotiate and how you market yourself.
