Recently had the chance to try a friend's Samsung S23, took a moon photo with it and suddenly the moon turned AI, elaborate details of the moon...which seemed really fake, not sure why Samsung incorporate such feature when taking photos should be 'what you see if what you get'. What were they thinking?

It's a well known Samsung "feature" almost with a status of a joke now I believe. If I remember correctly it started with a problem of capturing the moon details due to the high contrast between the moon and the surrounding sky.
But with high end phone S23 supposed to be, one would expect to achieve it with exposure bracketing effectively expanding the dynamic range. So afterall it may be really something just for fun.

I was hoping Samsung could just improve on their zoom feature. It's so pixelated at night, and they could just do something about it.

It sounds like the AI feature on the Samsung S23 altered the moon in the photo, making it appear fake. It's understandable to expect "what you see is what you get" when taking photos. The incorporation of such a feature may not align with user expectations.

How ridiculous. I hate Samsung cameras for precisely this reason.

Not just the moon photos that turn out odd, they tend to put filters on all pictures with people too.

The only thing I'll say is done pretty well are food and nature photos... colors come out beautiful.
