Wait time is completely unpredictable. Could be fast like you mentioned, or could be closer to 27/28 months. Right now I see no red flags, but that might also be because there are so many missing details. Plus points are that you're both fairly young, already have a family, including a son, and have been here for over 10 years. Agree, not nearly enough info to make an informed guess. I feel you probably applied for SC a little too quickly. Usually recommend to wait 3-5 years after getting PR before applying for SC.
You don’t mention anything about you and your spouse ages, jobs, salary, nothing much to go on. And by Mexican Chinese, do you mean one parent is Mexican and another parent is Chinese?
I have encountered one family here with South American descent (not Mexican but I forgot which country exactly) all getting citizenship over a decade ago. It’s not impossible. You won’t be the first.
