I thought cabin crew are pretty much in PPE attire during work?

It’s possible there was an error in testing, or maybe the virus had not developed to the point where it was detectable when she was tested. At least she was responsible enough to go see a doctor as soon as she became symptomatic, so kudos to her for that.
