I've just received my visa application form to fill in and one of the sections asks you to input your previous jobs salary information.
The issue for me is I may have over exaggerated my salary when I was negotiating with my new employer and obviously they will see the application form. Will the Singapore Government verify my previous salary or...?

The salary verification is usually done by the company that is about to hire you, most likely they do not wish to do so as they think you are fit for the job and they are willing to pay you the amount you are requesting anyway.
If that is the case, ICA might or might not verify your salary with your previous company.
So you can only do one thing i guess, fill in the correct salary just incase they check and pray the new company don't even notice it depending on who is filling the visa for you.
One thing for sure tho, lying about the salary on you application form could result in ICA rejecting your visa if they find out you lied about your salary, and you can kiss singapore goodbye.

You better hope that they're incompetent and don't carry out any due diligence on you.
If they do you will be waiving your job offer bye bye.
Any decent company will want to verify your previous salary, usually by payslip proof or confirmation letter from your previous employer.
What industry is this job in?

This is considered as false declaration. The company may request copies of your pay slips for verification. So, if they do, you might just bust your chances.
