I believe most of the top hotel restaurants (Fullerton, Mandarin Oriental, Shangrila, Ritz-Carlton, Hyatt etc. have Christmas brunches with free flow of champagne, wine, soft drinks. These are IMHO very nice places with good buffets - although so far I only attended standard, Sunday brunches. The problem is they are very heavy on your pocket and I would not be surprised if it was already too late for many of them to get the table. Personally I like the Town, the Melt, Mezza9, but expect to pay around ++$250 for such Christmas brunch. If you mostly into European (i.e. German) food I would check Paulaner Bräuhaus - food is good, they have wine, champagne and beer (obviously) option and they should be significantly cheaper.
