I assume you mean that the cooking lesson is given in the Japanese language rather than the cuisine is specifically Japanese. Please correct me if I'm wrong.
I like the
Japan Association recommendation, although membership is quite expensive unless you have company sponsorship. (Or possibly if another member invites you.) JAS has a classroom kitchen on site and many cooking classes.
Another place that has some cooking classes given in Japanese is
The Providore. You can also try the
Tokyo Sushi Academy in Singapore. Although the Sushi Academy doesn't specifically advertise cooking classes given in Japanese, most of the instructors are Japanese who speak Japanese, and you can schedule individual or small group classes there. I don't think they would have any problem handling your request. TSA teaches preparation of many types of Japanese cuisine, not only sushi.
