Carbs give you energy through the production of glucose, if you have lunch at 2pm, exclude carbs for dinner, sleep and eat breakfast at 9am, that's 18 hours since ones last carb meal, bring that down to 15 hours assuming that it takes 3 hours for the lunch to digest.

So, professional mma athletes deprive themselves of their main source of energy?

No, it's so they can shed weight fast for the weigh in. It's not a training diet.
