You are right to say that whitening (regardless of whether it is zoom or britesmile or any other whitening) is not permanent. The colour will tend to return to your base shade, how fast this happens really varies between individuals. Factors such as how much was the change, age of the patient, dietary habits etc all play a part.
To prevent the colour from returning back to your base shade, you would have to get a take home maintenance kit done and subsequently, you can use the whitening kit at home to maintain the shade.

Whitening is generally accepted as the safest cosmetic procedure. It does not damage the teeth and it is reversible. Several aesthetic dental assocaitions all over the world have accepted whitening as the least invasive cosmetic procedure.
I'd have posted the websites, but not sure if it's allowed.
